Speaker bio: Alberto Mendoza-Galina has a degree in MA BSc Biochemistry Engineering, and is specialized in food sciences and technology. He is also a GFSI consultant/auditor, HACCP certified by the UN/FAO and the USDC/NMFS. His work has taken him to countries such as the Kingdom of Saudi Arabia, Mexico, USA, and Canada; he has worked in different production environments from aquaculture, farming/harvesting, processing and distribution, to retail and food service establishments; in diverse industries including dairy, meat, poultry, seafood, beverage, canning, preserved foods, produce, confectionary, natural products, nutritional supplements, and entrée ready-to-eat products.

He works as an auditor for Merieux NutriSciences in Chicago, USA. He also worked developing the sanitary regulatory standards for food services for the tourism sector in Mexico. His professional experience includes working with small family businesses up to large corporations, such as McDonalds, Burger King, Subway, Costco, Wal-Mart, YUM Brands (Pizza Hut, Taco Bell, A&W), Sysco, closely working with their food and primary packaging suppliers. He has an expertise in hazard analysis, risk assessment and risk management, particularly dealing with manufacturing sites of high-risk RTE products.

At UBC he developed and teaches the following courses: FNH 414 Sustainability and the Food Industry, AQUA 507 Seafood Processing, FOOD 516 Advanced Food Safety and Food Quality Management, and FOOD 527A Special Topics in Food Sciences (Foodborne Outbreak Investigations), and Developing Traceability Systems, online educational micro certification program at UBC. Currently, he is the science advisor and co-founder of two projects, aquaponics and Oreocromis aureus (tilapia) aquaculture, and Arthrospira platensis (spirulina) aquaculture in closed systems.

Summary:


Risk Assessment Focusing on Pathogen Control and Allergens


The talk will focus on the following key points:
  • Connection between Hazard Analysis (HA) and Risk Assessment (RA); what is the backbone of our food safety plan?
  • What is (RA)?
  • How HA and RA inform the cleaning and sanitation program, the design of specific SSOPs for pathogen and allergen control. Evaluation of the sanitary design of equipment. E.g., Dole outbreak case and Listeria monocytogenes.
  • Cleaning and sanitation practices to avoid pathogen contamination of food contact surfaces
  • How the HA and RA informs the environmental monitoring program and how the EMP validates/verifies the pathogen and allergen control programs.
  • Listeria and whole genome sequencing.
  • General considerations for allergen control
  • Conclusions
